I wanna use an analogy to warm up. one of the things that I like to do, one of my hobbies is to cook on the grill and the barbecue, and, when I thought about today's lesson, there is a difference between grilling and between barbecuing. When you grill, you go high, hot, and fast. And when you barbecue you go low and slow.
That's the definition of barbecue for all of you aficionados out there. So if you're cooking high and fast, that's not barbecue. If you go down south and say I'm cooking high and fast, they'll say that's not barbecue, low and slow. But with today's lesson and with this survey of pilgas.
Progress we've got a grill, so we've gotta go high heat now when you do grill, sometimes you can slow down and reduce the heat and let that heat get to the center of the meat, especially if it's cold when you put it on, but, for the most part you're, you're gonna go hot and fast. So that's what our lesson kinda lines up like today. I'm gonna try to go hot and fast at the beginning, kinda slow down in the middle, and then end a little high heat, put a little sear on at the end. So, to set the stage this morning, remember that Christian and hopeful had encountered ignorance previously on the path to the celestial city.
